Hello everyone and welcome to a new recipe video! Funny story about these pancakes: I used to come up with the recipe while being on vacation in a small village in Italy. The only store we had close by was a small little place, not bigger than 20 square meters run by this super friendly Italian couple. On our last day there I wanted to make us pancakes. Since we had such limited access to ingredients, I looked for the easiest pancake recipe out there. Even the simplest one needed some altering, since we couldn't find everything we needed. But on this day I came up with the fluffiest vegan pancake recipe I've ever had. ✿ R E C I P E: 150g all purpose flour 1 sachet vanilla sugar (or one more tablespoon normal sugar & some vanilla extract) 1 tbsp normal sugar 2 tsp baking powder pinch of salt 1 tbsp sunflower oil 190ml plant based milk (I tried it with with oat, soy & pea milk and they all worked fantastically) 1 tbsp apple cider vinegar (sub for lemon juice, it works just the same) oil/ butter for the pan 1. combine your milk and apple cider vinegar/ lemon juice and set aside. 2. meanwhile, mix all of your dry ingredients. 3. start preheating your pan (a crepe iron works even better) to medium high heat (it should be fully preheated before you pour your batter on). 4. Mix your oil into your wet mixture, then combine everything (DO NOT overmix) 5. Directly spoon onto your pan (no resting, since the baking powder and apple cider vinegar won't react as much anymore and your pancakes won't rise that perfectly) 6.
