Hello everyone. If you’re like me you have had a LOT of turkey – and if you’re like me you’re probably a bit tired or turkey. Well, today I have an easy and very tasty meal for you. Mediterranean Meatball Bowl. It uses lamb and different spices and is about as easy of a meal you can make. Besides, after the last few days right now the last thing I want is to spend a lot of time in a kitchen. Here’s the recipe: ½ Pound of lean ground lamb, on egg, ⅓ cup of breadcrumbs, 1 tablespoon of chopped mint, 1 tablespoon of chopped parsley, ¼ cup of grated or finely chopped onion, 1 teaspoon minced garlic, ½ teaspoon of sea salt, ½ teaspoon black pepper, 1 ½ tablespoon of olive oil. For serving I used hummus and raita (or tzatziki) some baby spinach, one medium yellow bell pepper, crumbled Feta cheese and dried dill. In a bowl combine the lamb, egg, breadcrumbs, mint, parsley, garlic, onion, salt and pepper and form 8-10 balls Heat the olive oil in a skillet over medium heat. Fry the meatballs on all side until browned and cooked through. Remove from heat. Assemble the bowls. SMEAR each bowl with hummus and tzatziki over the bottom of the bowl, add a handful of baby spinach to each, followed by the bell pepper strips. Add the still-warm meatballs to each bowl. Finish with crumbled Feta cheese and dried dill over the top to your taste and sit back and enjoy!!! NOW – wasn’t that easy. Try it with lamb, but if you really don’t like lamb you can substitute ground beef or veal. ENJOY THE WEEKEND!!!
