Gurr walay Chawla: Ingredients : Sela Rice: 500g (approx. 2.5 cups) – Soak for at least 2 hours Jaggery (Gud): 500g (adjust to taste) – Broken into small pieces Water (for syrup): 1 cup Clarified Butter: ½ cup Green Cardamom: 4–5 pods Cloves 3–4 pieces Black cardamom 2_3 Dry Fruits Sliced coconut, almonds, and raisins (as desired) Method: Boil plenty of water in a large pot. Add the cloves, green cardamom, black cardamom soaked Sela rice and cook until it is 90% done (it should still have a slight "bite" or one string left). Drain the water and set the rice aside. In a separate pan, add 1 cup of water and the jaggery pieces. Heat over low flame until the jaggery melts completely. Strain the syrup through a fine sieve to remove any impurities or grit. Heat ghee in a large heavy-bottomed pot. Let them crackle for a few seconds. Add the dry fruits and fry them lightly until golden. Pour the strained jaggery syrup into the pot with the ghee . Once the syrup starts to bubble, gently fold in the boiled rice. Mix carefully so the rice grains don't break. Once the liquid has mostly evaporated, cover the lid tightly (use a kitchen towel to seal the steam) and simmer on very low heat for 15–20 minutes. Tip Since you are using Sela rice, soaking for a full 2–3 hours is crucial to ensure the grains turn out long and soft Ingredients : Sela Chawal 500gm (Taqreeban 2.5 cup) – 2 se 3 ghante pehle bhigo den Gud (Jaggery) 500gm Chote tukre kar len Paani 1 cup Ghee 1/2 cup Sabz Elaichi 4 se 5 adad Laung 3 se 4 adad Mewa Kata hua nariyal, badam, kishmish (Hase-be-zaroorat) (Method) Ek bare bartan mein paani ubalen aur bhige hue Sela chawal dal den. Chawal ko itna ubalen ke wo 90% tak pak jayen (yani ek kani baqi rahe). Phir paani chhan len aur chawal ek taraf rakh den. Ek pan mein ek cup paani aur gur dal kar halki aanch par pakaen. Jab gurr pighal jaye, to ise kisi bareek chhalni se chhan len taake kachra nikal jaye. Degchi mein ghee garam karen. ismein kate hue mewa jat dal kar halka sa fry karen. Ab is tadke mein gurr ka shira dal den. Jab shire mein ubaal aane lage, to uble hue chawal shamil kar den aur halke hath se mix karen. Jab shire ka paani khushk hone lage, to dhakkan ko kapre se lapet kar bilkul halki aanch par 15 se 20 minute ke liye dam par rakh den. Zaroori Tips: Sela Chawal ko kam 2 ghante bhigona lazmi hai, warna chawal sakht reh sakte hain. Gurr ko chhanna zaroori hai kyunki aksar gurr mein matti ya kankar hote hain.
