Ingredients: For the caramelized bananas: • 3 ripe bananas • 15 g butter • 90 g brown sugar For the cheesecake batter: • 400 g cream cheese • 2 eggs • 240 ml heavy cream • 1 tsp vanilla extract • 70 g white sugar • caramelized bananas (from above) For the caramel pecan layer: • 70 g white sugar • 70 ml warm heavy cream • 55 g butter • 15 g pecan paste • pinch of salt Instructions: 1. Caramelize the bananas: Slice bananas and fry with butter and brown sugar for 3–4 min until golden. Let cool. 2. Make the cheesecake: Soften cream cheese in the microwave (15–30 sec). Blend cream cheese, eggs, cream, vanilla, sugar, and caramelized bananas until smooth. Pour into a baking ring lined with parchment. Bake at 220°C / 425°F on the lowest rack for 40–45 min — the top should be dark golden and the center slightly jiggly. I check if the cheesecake is done using a thermometer. The internal temperature should be between 72–75°C. Cool completely, then chill for 6 hours or overnight. 3. Make the caramel pecan layer: Melt sugar in a dry pan until golden. Carefully add warm cream, then butter, pecan paste, and salt. Blend until smooth. Let it cool In fridge for at least 6 hours.
