This creamy chicken mince and vegetable casserole is very simple to prepare! Layers of potatoes, courgette, and onion are topped with seasoned chicken mince, a rich cream and egg mixture, and finished with melted cheese and fresh herbs. Ingredients: olive oil 1 onion, sliced potatoes, sliced (seasoned with salt & pepper) 1 medium courgette, sliced 500 g chicken mince salt & pepper to taste spices of choice (I used garam masala) 200 ml cream 2 eggs Italian seasoning 150 g grated cheese 2 tomatoes, sliced and lightly salted fresh dill or chives for garnish Instructions: Preheat oven to 200°C. Drizzle olive oil into a shallow ovenproof casserole dish. Layer sliced onion, seasoned potatoes, and courgette. Drizzle a little more olive oil on top. In a bowl, mix 500 g chicken mince with salt, pepper, and garam masala. Spread evenly over the vegetables. In another bowl, whisk together cream, eggs, salt, and Italian seasoning. Pour over the casserole. Bake for 50 minutes at 200°C. Remove from oven, sprinkle grated cheese on top and add sliced, salted tomatoes. Return to oven for an additional 10 minutes at 200°C, until cheese is melted and golden. Garnish with fresh dill or chives. Thanks for watching! Wishing you a lovely, relaxing dinner.
