Sticky Toffee Pudding Ingredients: 6-8 large dates, pitted 1 cup boiling water ½ tsp baking soda 5 tbsp unsalted butter, softened ½ cup brown sugar 2 small to medium eggs 1 ½ tbsp molasses 1 ½ tsp vanilla extract 1 cup flour (I used gluten-free) 1 tsp baking powder Pinch of salt Toffee Sauce: ½ cup heavy whipping cream 6 tbsp unsalted butter ¾ cup brown sugar Pinch of salt 2 tsp vanilla extract Directions: Make the toffee sauce by combining the heavy whipping cream, butter, brown sugar, and salt on a saucepan on medium to low heat Stir until the sugar has dissolved and the sauce has thickened (around 6-8 minutes) Remove from the heat and stir in the vanilla extract Pour the sauce into each cupcake tin and use a brush to coat the inside of each cup Preheat the oven to 350 F For the batter, pour the boiling water over the pitted dates and let soak for 5-10 minutes While that is soaking, combine the butter and sugar with an electric mixer until fluffy Add in the eggs one at a time, mixing in between Add in the molasses and vanilla extract and mix In a separate bowl, combine the flour, baking powder, and salt Pour the batter into the prepared cupcake tin and bake for 20 minutes until a toothpick inserted into the center comes out dry Let cool for 5-10 minutes, then remove from the cupcake tin and place flat side down Pour the rest of the toffee sauce on top Enjoy!! #stickytoffeepudding #toffee #viralfoods #foodtrends
