I volunteered on the Draken Harald Harfagre for the June 2019 Maintenance Season, and got to witness the dis-masting and re-masting of the ship, as well as the tent and yard. This was the second-to-last day of our work for the two-weeks. We used a modern crane to accomplish this for practical and safety reasons. I'm not sure how the Viking's would have stepped the mast with historical methods and tools, but surely it would have been much more difficult, more manpower intensive, and less forgiving. However, evidence suggests that most historical Viking ships were significantly smaller than the Draken is. Regardless, I would be interested to hear ideas about how this could be done without a modern crane, especially if backed by historical sources or practical experience. The process had a major hiccup -- the furling line got caught under the crane sling. The only way to fix this was to send someone up the mast to cut it off.
