Welcome back to our cozy rural cabin! Today is a very special day as Leila and Tela team up again to cook the king of all Persian dishes: Ghormeh Sabzi (Iranian Herb Stew). Cooking this authentic stew over a wood fire gives it an incredible smoky flavor and that perfect dark, rich color. There is nothing quite like the smell of frying fresh herbs echoing through the wooden cabin. The Cooking Process: Leila and Tela started by frying a massive amount of finely chopped fresh herbs (Parsley, Coriander, Spinach, Leek, and Fenugreek). Then, they sautéed the meat with onions, added the red kidney beans, and dropped in the dried limes (Limoo Amani) for that essential sour kick. They let the heavy pot simmer slowly over the hot coals for hours. This slow-cooking process is the secret to a perfect "Ja Oftadeh" stew, where the dark oil beautifully separates and floats on top.
