How to cook delicious and tender Sea Snail in Spicy Wine Sauce 秘訣就是勿用大火 將花螺煮熟 要用湯汁的餘溫將花螺焗熟 The skill is to not cook the sea snails over high heat, and use the residual temperature of the soup to cook the snails [辣酒煮花螺] 材料: 花螺一斤 乾蔥兩粒 芫荽2棵 蒜頭3瓣 辣椒乾3隻 花椒半茶匙 麻椒半茶匙 八角兩粒 香葉三片 辣醬汁 豆瓣辣醬2茶匙 沙茶醬2茶匙 芝麻醬1茶匙 生抽1湯匙 老抽1茶匙 蠔油1湯匙 糖3茶匙 混合酒 花雕酒100毫升 玫瑰露酒1湯匙 1. 先將花螺放入鹽水浸15分鐘 2. 再用鹽清洗花螺 直至花螺表面的潺完全洗去 然後將花螺出水1分鐘 撈起瀝乾備用 3. 將蔥頭、蒜頭及芫荽頭洗淨設成蓉備用 4. 再將所有辣醬汁的材料撈勻備用 5. 將花雕酒分為兩等份, 於其中一份內加入玫瑰露酒1湯匙 備用 6. 先將鑊加熱加入花椒、麻椒、八角、及辣椒乾 用細火白鑊炒1分鐘 再加入油 用細火繼續 兜炒 7. 將蔥頭蓉、蒜蓉及芫荽頭粒加入用細火繼續兜炒 8. 再加入混醬汁 繼續炒香 再加入一半花雕酒及300毫升水 用中大火煮10分鐘 9. 當汁滾起後加入花螺 兜勻 待汁料再滾起後後蓋上鑊蓋 然後關火焗30分鐘 10. 30分鐘之後將餘下一半的花雕酒及1湯匙玫瑰露洒加入 然後用大火將辣酒煮滾, 再加入少許栗粉水兜勻 11. 關火後立即上碟 [Sea Snail in Spicy Wine Sauce] Ingredients: 600g of Sea Snails 2 dried onions 2 stalks coriander 4 cloves garlic 3 dried chillies Half tsp of Sichuan pepper Half tsp of spicy pepper 2 star anise 3 bay leaves Spicy Sauce: 2 tsp chili bean sauce 2 tsp sacha sauce 1 tsp sesame paste 1 tbsp soy sauce 1 tsp dark soy sauce 1 tbsp oyster sauce 3 tsp sugar Mixed Wine Sauce: 100ml Huadiao Wine 1 tbs rose wine 1. Soak the sea snails in salt water for 15 minutes 2. Wash the sea snails with salt until the dirt is completely washed away, then boil the sea snails for 1 minute, take it up and set aside. 3. Rinse and chop the shallots, garlic and coriander and set aside 4. Mix all the ingredients for the spicy sauce and set aside 5. Divide Huadiao wine into two equal parts, add 1 tablespoon of rose wine to one of them, set aside 6. Heat the wok first, add the Sichuan pepper, spicy pepper, star anise, bay leaves and dried chilies fry without oil on a low heat for 1 minute, then add oil and stir-fry on a low heat until fragrant 7. Add minced shallots, minced garlic and coriander head and fry over low heat until fragrant 8. Add the mixed sauce and continue to sauté until fragrant, then add half of Huadiao wine and 300ml of water and cook for 10 minutes over medium-high heat 9. When the sauce boils, add the sea snails and mix well. When the sauce boils again, cover the wok, then turn off the heat and leave it for 30 minutes 10. After 30 minutes, add the remaining half of the Huadiao wine and 1 tablespoon of Chinese rose wine, and then use high heat to bring the spicy wine to a boiling, then add some corn starch water and mix well 11.
