Today I am sharing a recipe for a famous Sindhi sweet Pragri. We can say these are a kind of Sweet Samose/Meethe Samose or we can call them Sindhi Gujiya or layered Gujiya. These are made especially on the occasion of Holi. These are very delicious and this is a must-try recipe. Ingredients For outer covering 1. All purpose flour/ maida 250 gm/ 2 cups 2. Clarified butter/ ghee 1/4 cup 3. Salt 1 pinch For Slurry 1. Oil or clarified butter/ghee 3 tbsp 2. All purpose flour/maida 3 tsp For Stuffing 1. Mawa/khoya 250 gm 2. Powdered sugar 1/2 cup/ 100 gm 3. Cardamom powder 1/2 tsp 4. Raisins 1 tbsp 5. Cashew nuts 1 tbsp 6. Almonds 1 tbsp 7. Pistachio 1 tsp For Sugar Syrup 1. Sugar 400 gm/ 2 cups 2. Water 1 cup 3. Saffron strands 15-20 4. Lemon juice 1 tsp or citric acid 1/4 tsp 5. Cardamom powder 1/2 tsp For Garnishing 1. Thin silver leaves 2. Pistachio flakes For Frying Clarified butter/ ghee or oil Method For outer covering 1. Take all-purpose flour /maida in a mixing bowl, add 1 pinch salt and 1/4 cup of melted ghee, mix well. 2. Add water gradually and knead a soft dough just like chapati. 3. Cover it and give it rest for at least 15-20 minutes. For Stuffing 1. Heat a pan or kadhai, add mawa/ khoya to it by crumbling it. 2. Stir mawa continuously and roast mawa on medium flame till light golden color. 3. After it turns light golden, transfer it to a bowl. 4. Add cardamom powder, raisins and dry fruits and mix well. 5. Let it cool down little then add powdered sugar and mix well. Stuffing is ready. For Slurry Take oil or melted ghee in a bowl, add all-purpose flour/ maida, mix well. The slurry is ready. For Pragri 1. Massage the kneaded dough to make it smooth and soft. 2. Take a portion of the dough and roll it into a big chapati. 3. Take a bowl or a glass and cut the discs as shown in the video. 4. Now on one disc apply some slurry, spread the slurry evenly all over the disc and place the second disc over it and again apply slurry likewise and then placed the third disc over it and again apply slurry likewise and then place the fourth disc over it as shown in the video. 5. Now roll this stake of discs slightly and place one tbsp stuffing as shown in the video. 6. Apply some water around the stuffing and fold the discs to make pragri as shown in the video. 7. Make all Pragri likewise. For Frying 1. Heat oil or ghee in a kadhai, then place some pragri in the hot oil and fry them on medium the flame for some time then on low flame till light golden colour. 2. Fry all the Pragri likewise. For coating 1. Heat sugar syrup a little. 2. Place Pragris in sugar syrup one by one, turn them to coat sugar syrup all over and take them out on a plate. For Garnishing 1.
