你了解广西人做什么特产迎接新年吗?在我们老家广西,每逢春节几乎家家户户都要包长方形粽子过年,四方饱满,像小枕头。 腌五花肉、摘洗粽叶、磨筛绿豆、泡糯米,为做肉粽做好准备。一切准备就绪,第二天把做粽子的材料放一起,坐凳子上开始一天的“包粽子大事”。 我们端午节可以不包粽子,过年可必不可少。这里流传着一句话“无粽子不过年”,足以说明了我们对于春节包粽子的重视。粽子也不仅是逢年过节的送礼佳品,我们更把喜欢把粽子当作是一种吉祥物,年年粽年年中,包粽子吃粽子图的是一种吉利了。 Zongzi (粽子: zòng zi) is a traditional Chinese food that is made of sticky rice stuffed with an often meaty filling wrapped in bamboo leaves, Some people also call it Sticky Rice Dumpling. It is most often eaten during the Dragon Boat Festival (端午节: Duānwǔ Jié ), which falls on the fifth day of the fifth month on the Chinese lunar calendar. And this is to memorialize Qu Yuan(屈原 ), a famous Chinese poet who lived 2300 years ago in State of Chu inWarring States Period. However, when referring to traditional Chinese New Year food, Zongzi is also a kind of popular Chinese New Year food in my hometown Guangxi (广西: guǎng xī). It is top of the menu. The Zongzi we made is rectangular shape and salty flavor, so it is different from the Zongzi in other places. Using green beans with pork belly to make Zongzi is a classic way of eating in Guangxi. However, you can choose the filling according to your taste. The zongzi made by every family here are different. How to make Zongzi (Sticky Rice Dumpling): Step 1: Cut the pork belly into long strips, add white wine (or rice wine), fermented bean curd, salt and soy sauce to marinate for an hour. You can also add ground ginger. The purpose of ginger and white wine is to remove the fishy smell of raw meat. Tips: Pork fat does wonders for the glutinous rice and I promise, it will not taste greasy or fatty at all–everything just melts in your mouth. Step 2: Grind green beans, peel them, then soak the green beans in water to soften, and drain the water. Step 3: Soak the glutinous rice (糯米, also called sweet rice) in water for three hours, remove and drain the water. And if you like, you can also add a small amount of peanut oil and salt to the rice, and mix well. Tips: Use normal temperature water to soak the glutinous rice, no need to use warm water or hot water. Soak it longer if you want your sticky rice to have a softer texture. Step 4: The plants leaves we used it "柊叶"[zhōng yè]. In English it should be Phrynium pubinerve. Wash the leaves first, then put them in water and cook for a few minutes. It is usually enough when you smell the fragrance of leaves. Step 5: We use the rhizome of the plant as string to tie up the Zongzi. You can also use regular string. The tighter the string, the less likely it is to expose the rice. Step 6: Place Zongzi in a pot. Fill the pot with water completely covering the Zongzi. Zongzi need to be boiled in water for about 5 hours. Don't forget to check the water level from time to time. Just to ensure the Zongzi are always underwater. If there is too little water, you can add water to continue cooking. Tips: Cooking Zongzi requires a long time.
