Well, sir, today’s sandwich name belies the process involved in making it. The recipe calls to cook an egg at just below a boil for 30-45 minutes. Ahem, what? I’ve had instructions like that on a different sandwich from Mrs. Rorer’s Sandwiches of 1912. It did not end well. At any rate, today, I am busting out the sous vide stick aka immersion circulator to keep the water at even temperature since our stovetop runs way hot.
