During the Edo period, when the Tokugawa Shogun ruled, ninjas operated in the shadows all over Japan, and the Kanto region was home to some of the most skilled knifesmiths. The knives used by ninjas in their duties required perfect sharpness and high durability, and the skills of the craftsmen who made them evolved over the ages, eventually being passed down to the new form of Western-style kitchen knives. The Kanto Gyuto, a product of master craftsmanship, is manufactured at the Goka Cutlery Factory in Kashiwa City, Chiba Prefecture, and is a traditional Japanese craft that has evolved uniquely within the Western knife culture that began in the Meiji period. The only handmade Kanto Gyuto in Japan today is produced using a technique called "souhizukuri," in which one craftsman performs all the steps by hand.
