Extra-Dense Pineapple Coconut Loaf Bars Ingredients 1&1/2 cups all-purpose flour 3/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 3/4 cup sugar 2 eggs (room temp) 1/2 cup oil 1/4 sour cream 1 tsp vanilla 3/4 cup crushed pineapple, extremely well drained 1/2 cup shredded coconut (unsweetened preferred for structure) Heat oven to 325°F / 165°C. Line loaf pan. Whisk flour, baking powder, baking soda, salt. Whisk sugar + eggs well until slightly thick (this helps density without dryness). Whisk in oil, yogurt, vanilla. Fold in dry ingredients just until no dry pockets. Fold in pineapple + coconut. Press batter evenly into pan (don’t swirl). Bake 55–65 minutes Toothpick should come out with moist crumbs, not wet batter. Cool completely in pan → chill 1 hour → slice.
