It is Sunday but not just any Sunday. It’s International Sandwich Sunday! And today we’re heading to Argentina for the Sándwich de Miga. There seems to be tremendous flexibility in the fillings that go into these sandwiches. So I am loosely following one I saw on Facebook from Argentine Chef Paco Almeida (@pacoalmeida9439) This sandwich calls for a specific bread, Pan de Miga. It’s baked in a big block, then the crusts are removed and it is cut into thin sheets of bread. I found only one place to buy it fresh in the SF Bay Area where I live, The Empanadas King in Redwood City. Initially the owner didn’t want to sell me any as he didn’t think it turned out well that day. Then, I as I was enjoying a beef empanada that I bought he came out and asked how many sheets I need. I say just three or four. He goes in the back and comest out with five sheets tightly wrapped in cling film (to keep them from drying out). Yes! Project saved. He then refused to let me pay for them!
