This is a PKU recipe for a Mexican Cauliflower Rice Burrito Bowl dish! Check out my website for additional PKU resources and recipes: https://www.thrivingwithpku.com Ingredients: 3-3 1/2 cups of riced cauliflower (fresh or frozen) 1 tbsp. olive oil 1/2 red onion chopped 2 cloves garlic 1/2 tsp. garlic powder 1 tsp. cumin 1/2 tsp. oregano Dash of cayenne pepper Salt and Pepper to taste Any items you want in your burrito bowl! (I'm using avocado, tomato, lettuce, and lime) Directions: "Rice" your cauliflower by putting in a food processor (or cheat and buy frozen riced cauliflower like me!). Chop your garlic and half of your onion. In a sauce pan over medium heat, add 1 tbsp. of olive oil, the garlic and the onion. Saute together for about 1-2 minutes. Add in the cauliflower rice and spices. Stir and cook for about 8 minutes, stirring occasionally. If the rice starts to brown, turn it down. Taste test to make sure the cauliflower is tender. Time to assemble your bowl and eat! This recipe serves 2-3! Cauliflower Rice Protein Amount per serving (about 1/3 of the total recipe): (Simplified Diet, not counting the cauliflower or onion): 11 PHE or .75 exchanges or .4 grams of protein Counting everything: 87 phe or 5.8 exchanges or 2.6 grams of protein
