These madeleines are rich, soft with a citrusy sugar crust. The glaze is optional, but it adds depth of flavor and a fun texture, so do try! Thanks for watching and remember to subscribe to my channel for more pastry videos 🥰 Ingredients batter egg 100g honey 15g sugar 65g AP flour 100g baking powder 5.5g butter 115g lime juice 40g lime zest 1.5 pcs glaze icing sugar 90g lime juice 30g lime zest 1pcs Instructions Madeleines 1/ Melt butter over low heat and set aside. Zest 1.5 limes and rub the zest with sugar. 2/ Mix honey, sugar and egg together until completely dissolved. Using a water bath can help speed up the process. 3/ In a separate bowl, mix baking powder and flour, and sift into the egg mixture. Mix until just incorporated. 4/ Add lime juice to butter and mix well. Add butter into the batter in several stages, mix until completely incorporated before adding more. The final batter should be shiny and slightly elastic. 5/ Cover the batter and rest in fridge overnight to mature. (or up to 2 nights) . 6/ Pipe into greased mold. Bake in preheated oven at 175C for 15mins. Glaze 1/ In a bowl, add icing sugar, lime juice and lime zest together. Mix with a spatula until smooth. 2/ Dip the cooled madeleines and set on a rack. Set the glazed madeleines in preheated oven at 220C for 1min to set the glaze.
