Turkey & Chicken Meatloaf definitely not dry! To each pound of turkey or chicken add: 1 large egg 1 1/2-2 tablespoons of sun-dried tomato pesto WARNING PESTO CONTAINS NUTS! Either a total of 1/8 cup of a mix of grated Parmesan and Romano cheese OR 1/3 cup of using shredded cheese Mix - if mixture is too moist add a bit of breadcrumbs or a bit more cheese if dry add a very little bit of milk or a little more pesto I say this because pestos vary in moisture. I baked the 2 pound meatloaf at 375F for 50 minutes then used a meat thermometer to make sure it was thoroughly cooked If making a smaller or larger meatloaf adjust cooking times accordingly! Then I put it back under a low broiler to finish crisping the bacon on top If your bacon had cooked thoroughly while baking then it may not be necessary for you to put it under the broiler If you do: WARNING BAKING DISH MUST BE BROILER SAFE AND YOU MUST WATCH THE MEATLOAF CAREFULLY WHILE UNDER THE BROILER! It should only take a couple minutes. This meatloaf gets raving reviews from everyone who has tried it! Enjoy
