INGREDIENTS (for a 24cm cake tin) 4 eggs (yolks and whites separated) 200g (1 1/2 cups) dark chocolate 100g (1/2 cup) butter 150g sugar (75g + 75g) 40g (1/3 cup) all-purpose flour METHOD 1.Melt the chocolate and butter together in a saucepan, stirring continuously, and let it cool slightly. 2. In a large bowl, beat the egg whites with 75g of sugar until stiff peaks form using an electric mixer. 3. In another large bowl, beat the egg yolks and the remaining sugar with an electric mixer until the mixture is pale and fluffy. 4. Add the cooled chocolate mixture, mixing on low speed until smooth and uniform in color. 5. Add the sifted flour, mixing again on low speed until fully incorporated. 6. Finally, gently fold in the beaten egg whites in three batches, mixing from bottom to top with a spatula. 7. Pour the mixture into a 24cm cake tin lined with parchment paper. 8.
