Did you know how easy it is to make your own salad rolls? They’re fresh, customizable, and perfect for loading up with all your favorite fillings. These ones are inspired by my best friend since elementary school- we used to have little get-togethers where we’d all laugh while struggling to wrap our way-too-stuffed rolls!" 🥢💛 Salad Rolls (makes as many as you like) You’ll need: • Rice paper, 8.5” round • Vermicelli noodles • Shrimp/prawns, cooked and deveined • Pork, cooked and thinly sliced • Lettuce, sliced • Carrots, julienned or grated Peanut Hoisin Sauce • 2 tbsp hoisin sauce • 1 tbsp peanut butter • Chopped peanuts, for topping Instructions 1. Cook vermicelli noodles according to package instructions (or soak in boiling water until tender). 2. Cook pork if needed. For raw prawns, sauté or boil 2–3 minutes until opaque. 3. Prepare vegetables by slicing or julienning. 4. Make the sauce: Combine hoisin and peanut butter, microwave 10–30 seconds, stir, and top with chopped peanuts. 5. Fill a large bowl with warm water. Dip rice paper until just softened, then lay it flat on a clean surface. 6. Add shrimp, pork, carrots, and lettuce in a line across the center (avoid the edges). 7. Fold the two short sides over the filling, then roll from the side closest to you, tucking as you go. Wet hands help prevent sticking. 8. Serve right away with dipping sauce. Best eaten within 6–8 hours before the rice paper dries out.
