According to reports, the Centre has been buying onions at prices 74% higher than last year in Maharashtra, India's top onion-growing region. This year, the procurement rate is around Rs 29.5 per kg, up from Rs 16.93 per kg last year. Moreover, the government plans to spend Rs 1,500 crore on onions from Maharashtra alone, compared to Rs 1,200 crore last year. It's puzzling that in a world where globalization, better transportation and food processing have reduced seasonal price fluctuations for most perishables, India's onion market remains highly volatile. Fresh onions have a shelf life of 1-3 months, while dehydrated onions in sealed packs can last at least two years. It is to be noted that while India is a major producer of dried onions, 85% of them are exported. So, next time onion prices surge, consider using dried onions.
