The pear is a fruit of excellent gustatory quality, suitable for immediate consumption or storage. It is harvested from July to November when the fruits can be easily detached from the tree. Certain varieties are particularly well-suited for long-term storage, allowing enjoyment of these delicious fruits even in the heart of winter. *Pear Season: When to Harvest Them?* Pear harvesting occurs from late July to October in most regions and may extend into November in milder climates. The fruit should easily detach from its stem with a slight rotating motion. The seeds inside the fruit should be dark brown. *Timing for Harvesting Different Pear Varieties* *Harvesting Summer Pears: When to Pick Williams Pears* Early Varieties: 'Guyot', 'Beurré Giffard' in July. Seasonal Varieties: 'Williams Red', 'Williams Bon Chrétien', 'Beurré d'Anjou', 'Beurré Précoce', 'Beurré Hardy', 'Delbardélice', and 'Conference' in August, September, and October. *Harvesting Winter Pears* Late Varieties: 'Doyenné du Comice', 'Delbarexquise d'Hiver', 'Jeanne d'Arc', 'Passe Crassane' from late October to December. *How to Properly Preserve and Store Pears* Pears are well-suited for preservation, especially the so-called "keeper" varieties. To ideally preserve pears for several months, it is best to plant these specific types. *The Harvesting of Pears* To ensure better preservation, pears must be properly harvested. Use a fruit picker for tall trees and avoid picking multiple fruits simultaneously to prevent bruising. Gently place the pears in the basket, ensuring they are dry before storage. Harvest late varieties as late as possible, ideally just before the first frosts. Dip each pear stem in wax to limit evaporation and extend conservation time. Store the pears well-spaced in a dark, ventilated area with a cool ambient temperature consistently between 6 and 8 °C on slatted shelves or in wooden crates. They can last up to three months in such conditions. For freezing, pears can be quartered, peeled, and bagged, with a preservation time of 12 months. Preserve in compote or syrup in sterilized jars for a duration of 2 months, stored in a cool, dark place. Pears can also be made into jams, jellies, or liqueurs, with a conservation ranging over several years.
