Leave the second crust unbaked and roll it out like on the video. If you want a soft apple pie texture, Add the chayote to a pot of boiling water and cook until the softness you like, could be 45 minutes, but just keep checking with a fork. Melt the butter in a medium saucepan over medium heat. Add in the chayote and spice mix cook for 10 minutes or so. Mix in the xanthan gum and arrowroot, water and both sweeteners and stir until it's all incorporated.Bring it up to a boil, then reduce the heat and simmer it for about 5 minutes, making sure it doesn't stick. Take off the heat and set it to the side. Preheat your oven to 350°F .Pour the keto apple pie filling into your crust and spread the other pie crust over the top. Brush on the egg wash. Put your pie shield over the pie. Bake for 30-35 minutes or until the top is golden brown. Let it sit on the counter for 1 hour to cool before cutting.
