Magically Moist and Savory Southern Meatloaf

Well y'all I wanted to throw something together I could eat on for a day or two. So what could be better than an Old Fashioned Southern Style Meatloaf? So I take you along and show you one of the ways I make meatloaf here in my little country kitchen with Trixie helping out as usual, LOL. Now I just love this recipe for my favorite way to eat meatloaf. That is in making cold meatloaf sandwiches. I really enjoy a good meatloaf sandwich. Ingredient list is below with instructions. 1 ½ to 2 lbs. Ground Chuck 80/20 or Hamburger, your choice 2 eggs 1 small onion, diced small 2 stalks celery diced small 2 to 4 cloves fresh garlic minced 1 cup slated saltines crushed fine or breadcrumbs, your choice ½ tsp. Poultry seasoning ½ tsp. ground black pepper 1 tbsp. Worcestershire sauce ½ to 1 cup ketchup, depends on how much glaze topping you want on top of the meatloaf 2 tbsp. yellow mustard ½ cup mayonnaise, your choice, I prefer Duke’s 1 to 2 tbsp. honey To make glazed topping take ¼ to ½ cup of ketchup and mix with 1 to 2 tbsp.of honey depends on how much you want to put on the top of the meatloaf. Preheat oven to 350 F. Add all ingredients into a bowl with the exception of the ketchup, only add ¼ cup to meat mix, reserve remainder for glazed topping. Mix well by hand but do not over mix. Pour mixture into a greased glass baking dish, or on a baking dish of your choice. By hand form the meatloaf to the size of you’re choosing, really makes no difference. Place meatloaf uncovered into the preheated 350 degree oven. Bake for 1 hour. Remove after an hour, should be close to 150 degrees, at which time you can add glaze topping. Then place back into the oven for another 15 to 30 minutes. Finished temperature should be 165 degrees F. Total cooking time around an 1 hour and 30 minutes., depends on how your oven cooks.
