Fining agents are additives put into your brew, often times during the boil, that will bind with proteins and other rogue compounds suspended in your beer and will help to settle them out as your wort cools, thus making a clearer, more visually appealing brew. Irish moss is one of the most popular fining agents available. This natural ingredient is actually red algae that target proteins and larger particulates such as pieces of hops and grain suspended in your wort. The moss binds with them and they then settle to the bottom of the brew kettle, making it easy to either siphon the wort off the top, or to gently pour it directly into your fermenter leaving the sediment behind. There are many different fining agents available, each with different properties that target a certain compound to be cleared. Be sure to do your research to make sure you get the right fining agent to clear your brew exactly the way you want it to.
