This delicious Olive Garden knockoff recipe comes from writer/director (him) and costume designer/circus performer (her) Jim and Malia Harmon. Cooking Under Quarantine is a new series where friends show the world what they’re doing in the kitchen to get through the quarantine. It's about having fun, and getting through the day. INGREDIENTS 2 tablespoons olive oil 1 pound spicy Italian sausage uncased (broken up into small pieces) 1 cup diced onion (1 small yellow onion) 1 cup peeled/diced carrots (2-3 carrots) 1 cup celery (2-3 stalks) 3 cloves finely chopped garlic 1 (16-oz) can tomato sauce 1 (15-oz) can diced tomatoes 1 teaspoon dried basil 1 teaspoon dried oregano 3/4 teaspoon dried thyme 1 cup water 1 box chicken broth 1 (15-oz) can red kidney beans (drained/rinsed) 1 (15-oz) can Great Northern beans (drained/rinsed) 1 cup pasta DIRECTIONS Heat 1 Tbsp of olive oil and cook the uncased sausage meat until browned (roughly 5 minutes). Break the meat into small pieces while cooking. Put aside in a bowl and cover. Heat 1 Tbsp of olive oil and cook the onions, carrots, celery, and garlic until the onions on translucent and the carrots are soft enough to break with your spoon. (3-5 minutes, maybe longer depending how hot you have your pan) Add the tomato sauce, diced tomatoes, seasonings, sausage meat, water, and broth to the cooked vegetables. Simmer for 15 minutes. Add the kidney beans, Great Northern beans, and pasta. Stir until everything is warmed up and eat your delicious soup.
