Here’s a simple recipe for making Mung Ki Daal Ki Khichdi (Moong Dal Khichdi) in English: Ingredients: 1 cup Mung dal (split yellow moong beans) 1 cup rice (preferably basmati or any short-grain rice) 4 cups water (adjust as needed) 1 medium onion, finely chopped (optional) 1 medium tomato, chopped (optional) 1-2 green chilies, slit (adjust to taste) 1 teaspoon ginger-garlic paste (optional) ½ teaspoon cumin seeds ½ teaspoon turmeric powder Salt to taste 2 tablespoons ghee or oil Fresh coriander leaves, chopped (for garnish) Instructions: 1. Rinse the Ingredients: Rinse the mung dal and rice separately under running water until the water runs clear. Soak them together for about 30 minutes, if you have time. Drain and set aside. 2. Heat the Ghee/Oil: In a pressure cooker or a large pot, heat the ghee or oil over medium heat. 3. Add Spices: When the ghee is hot, add the cumin seeds and let them crackle. 4. Add Onions (optional): If using onions, add them now and sauté until they turn translucent. 5. Add Ginger-Garlic Paste (optional): If using ginger-garlic paste, add it and sauté for a minute until the raw smell disappears. 6. Add Tomatoes and Chilies: Then add the chopped tomatoes and slit green chilies. Cook until the tomatoes are soft and mushy. 7. Add Turmeric and Salt: Stir in the turmeric powder and salt. Mix well. 8. Add Mung Dal and Rice: Add the soaked and drained mung dal and rice to the pot. Mix everything well. 9. Add Water: Pour in the 4 cups of water and stir again. Check the salt and adjust if necessary. 10. Cook: If using a pressure cooker, close the lid and cook on high flame for 3 whistles. Then lower the flame and cook for another 5-7 minutes. Turn off the heat and let the steam release naturally. If using a regular pot, bring the mixture to a boil, then cover and simmer for about 20-25 minutes or until the rice and dal are cooked and soft. You may need to add a little more water if it becomes too thick. 11. Garnish: Once cooked, fluff the khichdi with a fork. Garnish with freshly chopped coriander leaves. 12.
