Hi Friends, Today I am here with "Ganesh Chaturthi" Recipe - Karanji / karjikai. Basically a deep fried sweet dumplings prepared sugar and coconut stuffing. But I used organic jaggery for healthy option. An oval shaped sweet dumpling prepared especially during festival seasons. it is known as karjikai in Kannada, karanji in Maharashtra, karachika in Tamil Nadu, kajjikayalu in Andhra preshrank and Gujiya in Gujarat. while, it may have different names, but the preparation and taste remains same.The best part is, it lasts easily for 5-7 days in a air tight container. hence, you can easily enjoy the taste of kajjikayalu for several days without losing its crispiness. Trips and Tricks for a perfect karanji :- Do not panic if you cannot fold or seal the gujiya. Seal the two edges and pinch it with the backside of a fork. this should be an easy hack for a perfect gujiya shape as show in video.alternatively, you can use the gujiya shaper Lastly, make sure the dough is moist and not a hard dough. moist dough will help to shape and fold the karanji easily. in addition, you can add 1 tsp of rava while kneading the dough if your dough is watery. rava should absorb the excess moist and makes crispy gujiya.
