Samanu: A 7-days recipe that is worth it!

It’s time for this ancient dessert from Persian Plateau, to be popular again. A sweet, sugar-free, pudding that is full of calcium, potassium, vitamins and cultural heritage. This Nowruz (Persian new year) due to coronavirus pandemic, I decided to be adventurous and cook my own Samanu. It is a tradition in Iran, Afghanistan, Tajikistan, Kazakhstan, and ... to have Samanu on the #Nowruz table. There were a variety of recipes I had to put together, but in the end, it's mostly my grandma's recipe and a dear friend's, Reza Mortazavi, which he, in turn, learned from his grandma. It was a fascinating experience, wash and clean the wheat, keep it humid all the time, watching the grains put on shoots, the scent of germinated wheat, the milling processes and last but not least, 15 hours boiling and simmering. And let me confess, I enjoyed every second of it! Being made of germinating wheat, this Persian delight has a soothing and rejuvenating effect, as the sprouts consume the starch in the grain and turn it into more protein and other healthy nutrition like vitamin C, folate and beta-carotene. On the other hand, sprouting decreases antinutrients, making the nutrients in the grains more suitable for digestion. As I said, it's a part of the Nowruz traditional table, called Haft-sin. It is an arrangement of seven symbolic items whose names start with the letter "س" pronounced as "seen". Persian calligraphy, which I used for the instructions (don't worry the video has subtitles), is one of the essential parts of our culture: elegant, sophisticated and mysterious. I hope you enjoy it!
