Written Recipe - Prawns Tawa Masala Prep time: 15-20 minutes Cooking time: 20-25 minutes Serves: 3-4 people Ingredients: Vaatan: GARLIC | GARLIC 6 BIG CLOVES / 15 SMALL CLOVES GINGER | Ginger 2 INCH GREEN CHILLI | Green Pepper 3 NOS. FRESH CORIANDER | Green Coriander A SMALL HANDFUL WATER | WATER VERY LITTLE Marinating: PRAWNS | SHRIMP 500 GRAMS (CLEANED & DEVEINED) GREEN PASTE | green paste 1 TSP SALT | SALT TO TASTE TURMERIC POWDER | turmeric powder A PINCH AGAL | Next 1 TBSP Cooking: OIL | Oil 2-3 TBSP ONION | ONIONS 2-3 MEDIUM SIZED. (CHOPPED) GARLIC | GARLIC 10-15 CLOVES GREEN PASTE | green paste REMAINING TURMERIC POWDER | turmeric powder 1/4 TSP KASHMIRI RED CHILLI POWDER | Kashmiri Red Chili Powder 1 TSP AGRI MASALA | Agari Masala 1 TBSP HOT WATER | Hot water A SPLASH TOMATOES | Tomatoes NO. (GRATED) SALT | SALT TO TASTE FRESH CORIANDER | Green Coriander A HANDFUL (CHOPPED) GHEE | Ghee 2 TBSP Method: Add garlic, ginger, green chilli & fresh coriander in a mixer grinder along with very little water & grind it into a fine paste. Add the cleaned & deveined prawns into a bowl & add the green paste, salt, turmeric powder & kokum agal, mix well & set it aside to marinate. If you don’t have agal then you can substitute it by adding some tamarind paste or lemon juice. Set a pan over high heat, add the oil & let it get hot. Add the onions & garlic cloves, stir well & cook over medium high flame until the onions turn golden brown. Once the onions turn light golden brown, add the remaining green paste & continue to cook over medium high flame until the onions turn golden brown. If the masala is getting too dry then you can add some hot water & continue to cook it further. Lower the flame & add all the powdered spices, a splash of hot water, stir well & cook over high flame for 1-2 minutes. Agri masala suits this recipe the best but if you don’t have it you can substitute it by using 1 tsp Kashmiri red chilli powder, 1⁄4 tsp turmeric powder, 1-2 tsp coriander powder, 1-2 tsp spicy red chilli powder & a large pinch of garam masala. Further add tomatoes & salt, stir & cook for 2-3 minutes. Then add the marinated prawns evenly on the pan, cooking over high flame white stirring at intervals, do not stir them too much or else they will lose their texture. Once the prawns are cooked, add some fresh coriander then heat the ghee in a ladle & add it to the prawns, stir well.
