No sugar banana chocolate muffins made with ripe bananas and stevia. Soft, moist, and naturally sweet with dark chocolate chips. An easy, healthy baking recipe perfect for tea time or breakfast. Ingredients • 85 g unsalted butter, room temperature • 45 g granulated baking stevia • 55 g egg (1 medium), room temperature • 5 g vanilla extract • 300 g very ripe bananas, mashed • 60 g sour cream or full-fat Greek yogurt • 160 g all-purpose flour • 4 g baking soda • 2 g baking powder • 1 g salt • 80–120 g sugar-free dark chocolate chips (or 85% dark chocolate) How to make 1. Preheat the oven to 220°C. 2. Beat the room-temperature butter and stevia for 3–4 minutes until light and creamy. 3. Add the egg and vanilla and mix well. 4. Add the mashed bananas and sour cream. Mix just until combined. 5. In a separate bowl, mix flour, baking soda, baking powder, and salt. 6. Add the dry ingredients to the batter in two additions and gently fold. 7. Fold in the chocolate chips. 8. Fill muffin cups to ¾ full. 9. Bake for 5 minutes at 220°C, then reduce the temperature to 190°C and bake for 15 more minutes. 10.
