Let the spices cool completely. Blend into a fine powder. Mix in dry mango powder, black salt, and Kashmiri chili powder. Store in an airtight container for up to 3 months. Amritsari Chole Recipe Ingredients: For Boiling the Chickpeas: 1.5 cups chickpeas (chole) – soaked overnight 4 cups water 2 black cardamoms 2-3 bay leaves 1 small cinnamon stick 3-4 cloves 2 tea bags (or 1 tbsp dried amla) – for dark color 1 tsp salt For the Chole Masala Gravy: 3 tbsp oil 1 tbsp carom seeds (ajwain) 1 tsp cumin seeds (For Tadka at end) 2-inch ginger (julienned) 1 tbsp ginger-garlic paste 3-4 tomatoes – blended into puree 2 big onions – finely chopped ½ tsp turmeric powder 1 tsp Kashmiri red chili powder 1 tsp coriander powder 1 tsp cumin powder 1 tsp salt (adjust as needed) 3+1 tbsp homemade chole masala 1 tbsp ghee (for tempering at the end) 1 tsp kasuri methi Fresh coriander for garnish This recipe gives you that perfect dark, rich, and flavorful Amritsari Chole, just like the ones from a Punjabi dhaba!
