It is spiced roasted or fried cubes of potatoes that are perfectly seasoned, lovely accompaniment with any meat as a side dish. Very flavorful and delicious served with the garlic sauce that also goes alongside. The key success in this recipe is to have tart, spicy, tangy, covered with the sauce and crispy potatoes at the same time. So pay attention to that balance! ☝️ ........................................................................ 🔥 Explore this perfectly healthy meal plan for a day: • Perfectly healthy Meal Plan - 1055 kcal | ... ⏱ 00:00 - Preparing the Ingredients ⏱ 02:08 - Preparing the Potatoes ⏱ 04:28 - The Magic Sauce ⏱ 07:42 - Mix the Potatoes Already Ready with the Sauce ⏱ 08:42 - Plating and Serving Time ........................................................... #cooking #eastern #roastedpotatoes The Recipe: 👇 Ingredients: For the potato preparation: 1 kg potatoes (5to6) cut into 3 cm cubes 🥔 2 tablespoons extra virgin olive oil 1½ teaspoons salt For the sauce: 4 tablespoons extra virgin olive oil 3 cloves garlic, minced 1-tablespoon ground coriander 1-tablespoon homemade red pepper paste Juice of 1 Lime Juice of 1 lemon 🍋 1-teaspoon red pepper flakes 2 cups chopped fresh coriander (cilantro) leaves 1 cup chopped fresh parsley leaves for garnish Salt and freshly ground black pepper Instructions: For the potato preparation: ✔️ Preheat the oven to 200°C (400°F) In a large bowl, toss the potato cubes with the olive oil and salt. Divide potatoes among 2 baking paper-lined oven trays. Transfer the trays to the oven and roast for 40 minutes, turning once, until golden. For the magic sauce: ✔️ Heat the olive oil in a cast-iron skillet on medium. Stir in the garlic, red pepper paste, red pepper flakes and coriander seeds. Cook for 2-3 minutes then add the lime or lemon juice. ✔️ Toss in the potatoes, and mix well to coat. Add ½ of the fresh coriander (cilantro). Cook for a further 2 minutes.
