James On Hastings Chinese Restaurant serves delicious Old Style Chinese Food. Some of the dishes can be described as Chinese Village Cooking or Chinese Countryside Cooking. Other dishes are favorite Cantonese and Hong Kong Style cooking. I ordered their Special Chow Mein and their Yang Chow Fried Rice. I wanted to see if these 2 dishes had good "wok hei", which is the sear flavor from the carbon sear wok. My mom and I agreed both these dishes had excellent wok hei. I got a chance to do a short interview with the owner, James himself. Of special interest is how his restaurant is surviving after the effects of the Pandemic. James also talk about how his restaurant makes the daily traditional Chinese soup that he serves at his restaurant. A lot of Chinese restaurants have stopped serving the daily Chinese soup but James continues this tradition. Recipe is below: CHINESE SPINACH SOUP 传统中式汤食谱 6 chicken drumstick bones or use other chicken bones 3 pork bones 8 to 10 cups water 2 pieces ginger (about 3 tablespoons) 1 to 2 teaspoon salt 1 to 2 teaspoon chicken base flavor 6 to 8 cups Chinese spinach In a small pot, boil the chicken bones and pork bones for 5 minutes to get rid of the impurities and dirt. Then transfer the chicken bones and pork bones into a larger pot. Add 8 to 10 cups water. Add 2 pieces of ginger or you can slice the ginger if you like. Cover with a lid and boil at low to medium heat for 1 hour. Then add the salt and chicken base flavor. Add the Chinese spinach and cook for a final 5 to 10 minutes. Serve in a large soup bowl. Enjoy!
