I’ve been craving Shiseido’s strawberry parfait, but since traveling is not an option right now, I’ve decided to recreate it at home. When I had the original one at Salon de Cafe in Ginza, I was impressed at how simple yet refined it is. There is no cake or crunchy component, the secret lies within the strawberries. Each year, limited editions are created using strawberries from different regions in Japan, and today, I’m going to make a home version using strawberries that I found at my local market. Ingredients Crème Anglais Vanilla bean 1/2 piece Milk 80g Sugar 10g Egg Yolk 20g Split the vanilla pod in half and scrape the vanilla seeds into the sugar. Rub the vanilla seeds with the sugar to evenly distribute the vanilla flavour. In a small pot, gently warm the milk to ~90C. Cream the sugar with the egg yolk until whitened, and pour half of the milk into the yolk mixture, while mixing with a whisk. Pour the mixture back into the pot with the remaining milk and thicken the sauce using low heat while constantly stirring with a spatula. When the sauce is slightly thickened or reaches 85C, turn off the heat and chill immediately. If there are small lumps in your cream, strain it with a fine mesh strainer. Fresh Strawberry Sauce Strawberries 150g Sugar ~15g Cut clean and dried strawberries into small pieces and mix with sugar. Adjust sugar to taste depending on how sweet the strawberries are. Cover and let macerate in the fridge for 2 hours. Whipped cream Whipping cream 240g Sugar 20g In a cold mixing bowl, add cold whipping cream and sugar. Whip on high speed until soft peak. Transfer to a piping bag with a star tip. Assembly Vanilla Ice-cream Strawberries 4pcs Remove the stems of 3 strawberries and cut them in half. Add ~100g of whipping cream to crème anglais and fold together. Assemble the parfait: strawberry sauce, crème anglais, strawberry sauce, whipping cream, ice cream, whipping cream, fresh strawberries.
