FRENCH CREOLE VEGETABLE PICKLE INGREDIENTS 300g green beans, trimmed, and cut in halves ½ of a small cabbage, chopped coarsely ( 250g) 250g cauliflower, cut into small florets 3 carrots, peeled, halved lengthways, sliced diagonally 1 cup vegetable oil 6 Pickling onions cut into 1/4s 4 garlic cloves, finely chopped 3cm-piece fresh ginger, peeled, finely chopped 3 or 4 chillies 1 heaped tsp. ground turmeric ½ cup white vinegar 2 tablespoons caster sugar 1 heaped Tsp. Salt 1 tsp white pepper ½ cup water METHOD In a large wok or pot heat up oil and add onions, cook for 2-3minutes. Then add carrots and cauliflower, add garlic, ginger, turmeric, sugar & vinegar cook for 2 minutes. Add the beans and cabbage with water, season with salt. Stir-fry for 2 minutes till all vegetables are heated through. The vegetable must still be undercooked and crispy. Add a little salt if needed to taste. To bottle: Sterilize 3 glass jars with tight lids. Wash and place in hot oven for 5 minutes. Transfer the vegetable mixture to the jars making sure liquid covers vegetables, seal with lids and allow to cool for 6 to 12 hours. Place in fridge and leave for at least 48 hours before eating.
