Kathy's Southern Kitchen Country Fried Steak & Gravy Kathy’s Southern Kitchen 6-8 Cubed Steaks Buttermilk 2 Cups of Self Rising Flour Peanut Oil Salt and Pepper To Taste Add steaks to a ziplock bag. Cover steaks with buttermilk. In another ziplock bag, add flour, salt and pepper. Removed steaks from buttermilk and dredge in flour coating completely. In a heavy bottomed skillet (preferably cast iron) add enough peanut oil to cover the bottom of your skillet and come up about “one finger” high. Turn on medium high heat. Add steaks and cook 3-4 minutes on each side or until golden brown. Cooking time may very depending upon the size of your steaks. Gravy Pour off grease from skillet reserving 2-3 tablespoons. Turn on medium heat. Add 3 tbsp of the flour mixture used to coat your steaks to the oil. Stir and cook flour until it turns brown. Add ¾ cups of water very slowly, stirring constantly. Once water is all mixed in add ¾ cups of milk stirring constantly. More milk or heavy cream can be added to get the desired consistency. Add salt and pepper to taste.
