Country Captain is the rare Southern dish that wears its passport stamps openly. Born of the British Empire’s Indian campaigns, ferried to Charleston and Savannah by spice traders, and adopted by Lowcountry cooks who knew a good thing when they tasted it, it’s essentially a chicken curry that decided to settle down on the American coast.
