This is a side by side comparison of what it looks like inside the Oculus Quest 2 vs the real life. When running this piano app, the first thing to do is to map the piano first, so that the Oculus know where your real piano located, and where the piano keys are. There will be a calibration process for this mapping, takes about 5 minutes max. Then when you are ready to start, you place the oculus dual controllers flat down. In this way, Oculus will switch to hands tracking mode. There are several cameras and many sensors to track your hand and every finger. Any hand/finger movement is immediately reflected in the Oculus. In this Piano app, you can even upload any song into it, as long as it is in Midi file format, and you can learn that song.
