Welcome to Nurni’s Kitchen! Today, I’m sharing one of my all-time favorite recipes — a soft, moist, and healthy almond flour banana bread that’s naturally sweetened and full of flavor. It’s gluten-free, simple to make, and perfect for breakfast, snacks, or dessert. 🧁 Ingredients: 3 spotted bananas 2 room-temperature eggs ¼ cup of milk ⅓ cup of sweetener of choice (I used maple syrup) 3 tablespoons of melted butter (or coconut oil) 2 cups of almond flour 2 teaspoons of vanilla extract 2 teaspoons of baking powder Pinch of salt Semi-sweet or dark chocolate chips (optional) Cinnamon (optional) 🕐 Bake at 350°F for 45–50 minutes using a loaf pan. 👩🍳 Instructions: Preheat your oven to 350°F (175°C). In a large bowl, mash the bananas until smooth. Add eggs, milk, sweetener, melted butter, and vanilla extract. Mix well. Add almond flour, baking powder, and salt. Stir until combined. Fold in chocolate chips and cinnamon (optional). Pour the batter into a greased loaf pan. Bake for 45–50 minutes or until golden brown and a toothpick comes out clean.
