How to make Pavlova. Anna Pavlova was a famous Russian ballerina in the early 20th century. This dessert was created in her honor. It's debated whether or not it was created in Australia, or New Zealand. One of the first recipes contained strawberries, so in honor of both countries I decorated this pavlova in strawberries and kiwi. The tart fruit also has a blood orange curd to add some sharpness to the already sweet dessert. 6 egg whites, room temperature 1 cup sugar 2 tsp corn flour 1 tsp white vinegar 1/2 tsp vanilla (optional) The recipe for the blood orange curd is here: • Blood Orange Curd | How to make Blood Oran... Preheat your oven to 350°F/180°C In a large mixing bowl add the egg whites and whisk until it reaches soft peaks. Use a thin wired balloon whisk for best results. My stand mixer has a thick wired whisk and I never get the best results. Add 1 cup of sugar a spoonful at a time and whisk into the egg whites. Repeat until all of the sugar is used. The egg whites should be stiff and glossy. Add 2 tsp corn flour and 1 tsp white vinegar. This adds stability and gives the pavlova a marshmallow consistency. If you want a bit of flavor add 1/2 tsp of vanilla. However if you add vanilla of any kind the pavlova will a darker color. If you want a pure white pavlova leave it out. Pour the mixture out onto a parchment lined baking tray and shape it into whatever design your hear desires. You can take your time, but it will change shape and will likely break as it cooks and cools. Put the pavlova in the oven and immediately turn down the temperature to 300°F/148°C this gives the pavlova a crisp exterior. Bake the pavlova for 1 hour and 45mins and then allow it to cool completely in the oven. You can leave it overnight. Fill the pavlova with whipped cream, fresh fruit, and a sharp curd.
