This is my family’s simple, classic Japchae recipe, made with everyday ingredients yet full of flavor and color. Traditionally served as a side dish, 300 g of dangmyeon (Korean sweet potato noodles) makes enough to serve 12–15 guests — perfect for gatherings or potlucks. You can keep it traditional or add your own twist with bell peppers, fish cakes, or imitation crab. I like to sauté each ingredient separately so the colors stay vibrant and the textures remain distinct. If you’re using uncut noodles, trim them just before serving — not too short! Japchae tastes best when you get a full mouthful of noodles, vegetables, and beef in every bite. A simple dish that’s bright, festive, and always a crowd-pleaser.
