Today Andy is doing some maintenance work on the Ford 2600, installing a new seat and dash cluster. Its a dreary nasty day today so Meagan is fixing some beef stew and peach cobbler tonight for supper! Beef Stew Recipe 2-3 lbs beef cut into 1-2 inch pieces salt pepper grease 1 medium onion, chopped 7 cloves of garlic, minced 2 tablespoons of apple cider vinegar 1/4 cup flour 1 quart of tomato juice 1 cup water 1 1/2 tsp sugar 1/2 tsp dried thyme or a couple sprigs of fresh carrots potatoes Add grease to pan and brown beef on all sides, remove from pan, add onions and garlic, sauté until they are soft and fragrent (add more grease here if need be). Add ACV. Add beef back to pot. Add flour and stir to let flour stick to all the beef chunks. Add tomato juice and water. Cover and let simmer on low for 30 min to 1 hour, stirring occasionally to prevent sticking. Chop up fresh carrots and potatoes (put as many as your heart desires), add to stew, cover and let it continue to simmer on low until potatoes and carrots are soft (around 30 min-1 hour more), stirring occasionally to prevent sticking. Enjoy this on a cold winters day! Peach Cobbler 1 cup fresh/frozen peaches 1 tbsp sugar water 1 cup self rising flour 1 cup sugar 1 cup milk 1 stick of butter, melted Preheat oven to 400 degrees. In a small sauce pan simmer peaches, add just enough water to cover the bottom of pan (if peaches haven't made their own juice) add 1 tbsp sugar, simmer until sugar is dissolved. In a separate bowl combine flour, sugar, milk and butter. Stir until combined. Pour flour mixture into 9x13 pan, evenly pour peaches and liquid around the flour mixture as seen in the video. Do not stir. Cook in 400 degree oven until center is bubbly and edges are brown, around 25-30 minutes. Enjoy with some vanilla ice cream!
