I got everything I needed at the two stores I visited to make chicken chow mein. Came out wonderful. Here is my recipe: Noodles (yakisoba or spaghetti or egg noodles ) Chicken (of your desire) SAUCE: 1tb oyster sauce 1tb hot water with 1/4 tsp sugar dissolved 1tb light soy sauce 1 tsp dark soy sauce 1/2 tsp sesame oil 2 tsp sherry (Shaoxing wine) salt and pepper to taste 2 tsp ginger (fresh-will need to sautéed- or dried or powder) 1 garlic clove (or to taste) MARINADE: Chicken thin sliced 1 1/2 tb water 1tb oyster sauce 1 tsp cornstarch 1 tsp wine I tsp oil Combine all and set aside VEGETABLES: Carrot julienned Onion (white part of green onions combined here) Green onion(white finely chopped, green parts cut into 1-2" pieces) Cabbage cut into chunks Celery cut into 1" pieces [You can use any additional veg you want, I used some swiss chard from my garden and had the cabbage Kimchi on the side] Cook noodles per package, drain , rinse in cold water, add oil to coat set aside Cook chicken in hot skillet until pretty much done, 2-3 mins. remove cook onion, garlic and ginger until fragrant and tender cook mushrooms cook carrots until desired doneness Cook cabbage until soft stirring all veg together as you cook Add noodles and toss with veg and heat Add chicken and sauce and toss to heat all I hope I didn't leave anything out but you can always Google it.
