Don’t forget to like, share, and subscribe for more recipes. ❤️ Portion servings: 4-5 pax Preparation time: 05 mins Cooking time: 40 mins Ingredients: For cooking methi: Oil 1 tbsp Garlic sliced 1½ tbsp Methi chopped 1 bunch Salt a pinch For making peanut mixture paste: Peanuts roasted ¼ cup Sesame seeds 1 tbsp Roasted chana dal ¼ cup Water as required For making lasuni methi: Oil 1 tbsp Jeera 1 tsp Garlic chopped 1½ tbsp Dry red chilli 1 pc Onion chopped 1 pc Tomato chopped 1 pc Salt ½ tsp Turmeric powder ½ tsp Red chilli powder 1 tsp Coriander powder ½ tsp Water as required Peanuts mixture paste Water as required Cooked methi Method: Prepare the Methi Heat oil in a pan and add sliced garlic. Sauté the garlic on medium heat until it turns golden and releases a nutty aroma. Add chopped methi to the pan and sprinkle a pinch of salt. Mix well. Cook the methi until it wilts completely and its raw bitterness reduces. Stir occasionally to prevent sticking. Once cooked, remove the methi from the pan and set it aside. Make the Peanut Mixture Paste In a grinder, combine roasted peanuts, sesame seeds, and roasted chana dal. Add a small amount of water to the mixture and grind it into a smooth paste. Set the paste aside for preparing the gravy. Prepare the Gravy Base Heat oil in the same pan or a fresh one. Add jeera to the hot oil and allow it to splutter. This will release its flavor. Add chopped garlic and sauté for a few seconds until fragrant. Toss in a dry red chili and sauté briefly to enhance its flavor. Cook the Onion and Tomato Add chopped onions to the pan and sauté until they become soft and golden brown. Next, add chopped tomatoes. Cook the mixture on medium heat until the tomatoes break down completely and form a thick, pulpy base. Stir occasionally to prevent burning. Add Spices Season the onion-tomato mixture with salt, turmeric powder, red chili powder, and coriander powder. Mix well and cook for a minute to roast the spices, ensuring they release their aroma and flavor. Incorporate the Peanut Paste Add the prepared peanut mixture paste to the pan. Stir well to combine it with the onion-tomato base. Pour in some water, a little at a time, to adjust the consistency of the gravy. Simmer the mixture for a few minutes, stirring occasionally, until the flavors meld together. Combine Methi with Gravy Add the cooked methi to the prepared gravy. Stir thoroughly to ensure the methi is well-coated with the peanut-based sauce. Simmer on low heat for a few minutes, allowing the methi to soak up the flavors of the gravy.
