A few months ago, Rose and I visited the Two Stacks barrel warehouse for a bit of a tour and tasting. During the tour, we got a chance to open a cask and take a sample, and we actually sampled this whiskey, so I knew it was going to be good before we even got it! It’s a 20 year old Single Grain from the Cooley Distillery, which was matured for 20 years and 4 months in a 1st fill ex-bourbon cask before spending about 6 months in an ex-pear brandy cask. Single grain whiskey, when made right, has a soft, sweet profile which can be a great base for other flavours. Pear brandy is also light, also sweet, and could have been overpowered by a rich single malt or spicy pot still, so the combination here works perfectly. It comes in at 58.5ABV, is natural colour and non-chill filtered, so let’s get into the tasting notes! Two Stacks Pear Brandy Finished Whiskey Review Tasting Notes Nose Apples and pears, obviously, but as if they've been stewed with cinnamon, cloves and plenty of brown sugar until it all caramelised. Despite being almost 60%, the nose is really approachable, with honeycomb, butterscotch, and vanilla bean Palate The palate is spicy, like those stewed apples and pears, but more spice and less fruit, the fruit is still present, but definitely behind the spice, but still on top of that lovely layer of vanilla, caramel and honeycomb. On the second sip, the flavour of the oak became a little more apparent, adding more baking spices and a light tannic note. Finish The finish continues with the tannic oak notes, but they never overpower the core sweet, spiced fruit of the whiskey, which linger on nicely into the finish. This is a really, really approachable whiskey, despite being at cask strength! The combination of sweet grain whiskey, with soft pear notes brings forward a really tasty little combination. It is an expensive whiskey, but an age-statement single grain whiskey like this is typically a hard-to-find, rare whiskey, and coming in at cask strength, I think the price is justified. ------------------------------------------------------- I'm a total whiskey nerd and this channel is all about Whiskey, Whisky, Bourbon, Rye, Pot Still Whiskey and Single Malt Whiskey.
