Fish Cutlet Recipe: Fish (boneless) - 300 g Potato (halved) - 100 g Turmeric Powder - ¼ tsp Salt - ½ tsp + ½ tsp + 1 tsp Oil - 2 tbsp Onion (finely chopped) - ½ Cup Green Chilli (finely chopped) - 1 tbsp Ginger (finely chopped) - 2 tsp Curry Leaves (chopped) - 10 nos Black Pepper Powder - 1 tsp Garlic (finely chopped) - 1 tbsp Egg - 2 nos Breadcrumbs - 1 Cup Oil (For frying) - As needed Cooking Instructions: 1. Cut the potatoes in half and cook with enough water to cover them and ½ tsp of salt in a pressure cooker for 2 whistles. Once done, peel and mash the potatoes. Set them aside. 2. In a pan, bring water to a boil and add ½ tsp salt and turmeric powder. Add the boneless fish chunks and boil them for 5 minutes. Remove the fish from the water and shred them with a fork. 3. Heat 2 tbsp of oil in a pan. Add finely chopped onion, green chilli, garlic, ginger and curry leaves. Cook for 1 minute. 4. Add 1 tsp salt and black pepper powder. Add the mashed potato and shredded fish to the pan. Mix and cook for 1 minute. 5. Cool the mixture completely. Once the mixture has cooled down, form them into 3-inch wide cutlets. 6. In a wide-mouthed bowl, crack open an egg and beat it. 7. In another plate, add the breadcrumbs. 8. Dip each cutlet in the egg mixture and then in the breadcrumbs, and then place them on another plate. 9. Heat up oil, and shallow fry them until they turn golden brown. Cooking Tips: 1. The cutlets can also be deep-fried for a more even crust and colour. 2. If the mixture is too loose, you can adjust the consistency by adding breadcrumbs. The mixture can also be refrigerated, which makes it easier to shape. 3. Make sure that the mixture has completely cooled before shaping them into cutlets.
