Insert the fillet knife just behind the gills and make a cut down the length of the fish's backbone, stopping at the tail. Next, turn the fish over and repeat the same cut on the other side. Insert the fillet knife under the ribcage and slice along the spine, separating the fillet from the bones. Repeat this process on the other side of the fish.
