Fresh, flavorful, and good for your heart—these fish tacos are a must-try for your next meal! Ingredients (single serving): 1 TBS extra virgin olive oil Juice from ½ lime ½ tsp chili powder ¼ tsp paprika Sprinkle of cumin Sprinkle of cayenne pepper 1 fillet of tilapia, mahi-mahi or halibut (~4-5 oz) 2, 6” corn tortillas (freeze leftover tortillas, frozen tortillas are easy to reheat) For the corn slaw 1 TBS lite mayonnaise Juice from ½ lime 1 TBS chopped cilantro 1 tsp honey ½ cup shredded purple cabbage ½ cup corn kernels ¼ to ½ minced jalapeno depending on preference Avocado (optional) Directions: 1. Mix 1 tsp of oil, lime juice and spices in a flat baking dish. 2. Add fish to mixture, coat well and marinate for 10-15 minutes. 3. Meanwhile, in large bowl whisk together mayonnaise, lime juice, cilantro and honey, stir in cabbage, corn, jalapeno and season with a sprinkle of black pepper. 4. In a nonstick skillet, heat 2 tsp of olive over medium heat. Add fish. Cook through ~ 3-5 minutes on each side. Let rest for a few minutes before flaking with a fork. 5. Assemble tacos by layering fish on corn tortillas, topping with corn slaw, avocado and a squeeze of lime juice.
