This original drink uses Singani, Elderflower Liqueur, freshly-squeezed Grapefruit Juice, Aromatic Bitters and a whole Lemon Peel for garnish. This drink was built with the concept of a French 75 in mind. The Perennial Fizz got its start when a friend asked for a drink that was light and easy. Knowing that she appreciated the French 125 ( • French 75 - A Classic Cocktail Made Two Wa... ), which is a fancy name for the French 75 with brandy, I started with that basic idea for this drink. The French 125 is softer and sweeter than the French 75. I started by replacing the brandy with Singani. Having no sparkling wine on-hand, I opted for soda water, but not wanting to sacrifice the extra boozy kick on the champagne, I swapped in elderflower liqueur for the simple syrup ( • How to Make Simple Syrup (Booze in the Kit... ). Then hit it with some bitters and an extra long lemon peel. It was good and was a success with my friend, but it didn't quite have that third dimension. I swapped the lemon juice for grapefruit juice and that's what did it. That's what brought it all home. Singani, elderflower liqueur and grapefruit juice are meant for each other. They are all cut from the same cloth, but come together is such a complex and satisfying way. This drink feels light and smooth, but it still packs a punch, it just doesn't let you know until it's too late. You might have to be careful with this one. Cheers! Recipe: 2 oz Singani 0.75 oz Elderflower Liqueur 0.75 oz Grapefruit Juice 2-3 dashes Aromatic Bitters top Soda Water garnish whole Lemon Peel Stir all but soda briefly with ice. Strain into champagne flute. Top with Soda. Garnish with a long lemon peel.
